Healthy mango jalapeno yogurt parfait

A heealthy yogurt parfait inspired by mango lassi and mango salsa!

Ingredients
  

  • 1 mango ripe
  • 1/2 cup plain yogurt
  • 2 tsp honey or any sweetener of choice, adjust to suit your taste
  • 10 roasted nuts I used pecans and almonds
  • ½ tsp Jalapeno finely chopped

Instructions
 

  • Mix honey/sugar with yogurt and whisk to make it smooth.
  • Chop mangoes into small pieces. If the mangoes are not very sweet, add a spoonful of your favourite sweetener and mix well.
  • Deseed less than a quarter of a jalapeno and chop it into tiny pieces. Mix Jalapenos with the chopped mangoes.
    Note: We only want the flavour here of Jalapenos, not the spice.
  • Chop roasted nuts into small pieces.
  • Assemble the parfait. Take a tall glass and add in the mango jalapeno mixture. Next add a layer of sweetened yogurt followed by nuts. Repeat the layers and enjoy!

Notes

  • This recipe yields an individual serving.
  • Use ripe, sweet mangoes preferably the ones that aren't very fibrous. Mangoes taste the best when they are in season.
  • I like to use yogurt that is not very tart. 
  • To make a breakfast parfait, consider adding granola in the layers!
