About Plateful of Veggies

Hi there!

My name is Shwetha, the human behind Plateful of Veggies. Thanks so much for stopping by. I am a newbie in blogoshpere and my posts, though just a few right now will definitely grow with your support, encouragement and feedback. Do check out my recipes and drop a comment or an email.

I am not sure if the world needs another blog, but food being my passion I felt I needed an outlet to document my adventures in kitchen. Hence, this blog was born.

On this blog, you will find lacto-vegetarian and vegan recipes with emphasis on whole-foods. I hail from a beautiful coastal town in the south of India called Mangaluru so you will find many traditional recipes from the region and from the Havyaka community. Many of these traditional recipes are also naturally or easily vegan!

I have always been passionate about food and moving to USA opened new doors in my culinary adventure. With easy access to different cuisines, i got an opportunity to taste different flavors which made it easy to study about different cuisines. I love South east Asian, Mexican, Mediterranean cuisines to name a few and I love recreating the dishes at home. Wherever possible, i will include tips for substituting ingredients so that non-availability of an ingredient becomes less of a hurdle.

My beliefs

I believe in natural and whole foods, I try to reduce processed food in everyday life and when I do buy processed food, the ingredients that went in matter to me.

I love to bake and mostly bake with whole grains. I aim to reduce the oil and sugar but still retain a good taste and texture

When it comes to cooking, i highly believe we should keep tasting and adjust the ingredients to suit our palate. Makes a huge difference and you will feel liberated and more confident in your kitchen. I am here to help new cooks achieve that. I will try to include troubleshooting tips in recipes wherever needed to help with that.

What is Havyaka cuisine?

The traditional food and recipes of people who belong to a community called Havyakas. The recipes have been passed down through generations.

What makes Havyaka cuisine special?

Lacto-vegetarian cuisine. Most of the recipes are naturally vegan or can easily be made vegan. The recipes are simple, quick, require minimal spices. Coconut and coconut oil are an integral part finding it’s way into most of the dishes. Oh yes, tastes divine!
