Healthy black forest parfait for 2!

Equipment

  • blender/food processor
  • I use standard measuring cups to create my recipes.

Ingredients
  

For chocolate dates layer

  • 10 dates kharjoora/khajoor
  • 2 tbsp almond flour optional, use extra nuts instead
  • 2 tsp cocoa powder adjust depending on your taste
  • 10 pecans or any nuts I used them raw. Can be roasted.
  • a splash of vanilla extract
  • a pinch of salt

For yogurt layer

  • ½-¾ cup yogurt/dahi/mosaru that is less tart/sour
  • ½-1 tbsp honey or sweetener of your choice, adjust to suit your taste

Cherry layer

  • 15 fresh cherries

Instructions
 

Prepare chocolate layer

  • Blend/process dates, almond powder, cocoa powder, nuts, vanilla,salt into a coarse powder.

Prepare yogurt layer

  • Whisk yogurt and honey together.

Prepare cherries

  • Chop the cherries fine.

Layer

  • Choose two small serving bowls of 5oz(about half cup) capacity.
  • Layer the ingredients as you wish! I start with the chocolate layer, followed by yogurt and chopped cherries and repeat!

Notes

  • This makes a rich dessert as it is made with dates and nuts. So I make two small sized parfaits with the measurements given above. 
  • I used raw pecans. The nuts can be roasted as well.
  • If planning ahead, the yogurt can be hung to remove excess water. It is an optional step which I skip but gives more defined layers :) Use 3/4 cup yogurt if you are planning to drain the water from it. 
  • Using the same idea, you can prepare yogurt parfaits using different fruits and toppings.
