Cream cheese filling
8ozcream cheeseat room temperature or slightly warmed
3-4tbsppowdered sugar
¼cupdried cranberriesor ½ cup fresh red coloured berries
Instructions
Prepare filling
If cream cheese is not at room temperature, warm it for 15 seconds in the microwave.
Add powdered sugar and mix until combined. NOTE: You may also add your favourite flavour extracts into the filling.
Prepare dosa/wrap
Add spinach and water, salt into a blender and blend into a smooth paste.
Add whole wheat flour and mix/blend.
Heat a tava/griddle on medium heat.
Pour a small ladleful of the batter in the center of the griddle.
Place the ladle in the center and move in circular motion, spreading the batter into a circle.
Cover and cook. Using a spatula, peel the dosa off the griddle and place it on a plate.
Assemble
Place the dosa bottom side up.
Add cream cheese filling and dried cranberries/fresh fruits in the middle.
Roll and serve.

Notes
Whole wheat dosa does not need a greased tava/griddle. If the griddle has been greased, remove excess using a cloth. Whole wheat dosa does not spread well on a greased griddle/tavaSUBSTITUTIONS
Hung yogurt, mascarpone cheese, ricotta cheese make a good filling instead of cream cheese.
Instead of cranberries, any other red coloured fruits/dry fruits can be used.
All purpose flour can be used to make the dosa instead of whole wheat flour.
OTHER USES FOR WHOLE WHEAT DOSA
Plain, without spinach, this whole wheat dosa makes a quick wrap. Smear peanut butter and jam over two dosa, roll and you have an easy lunch/snack.
Serve with chutney for an easy south Indian breakfast.
