Potato raita / Indian potato salad with yogurt

Potato raita spiced with ginger makes a perfect refreshing side!

Ingredients
  

  • 500 g uncooked potatoes made 4 cups after cooking
  • ½ cup chopped red onions or shallots,pearl onions
  • 1 tsp crushed ginger/ginger paste
  • 1-2 cups yogurt
  • 1 green chilli any variety optional
  • water as needed

For hot oil tempering/oggarane/tadka

  • 1 tsp oil
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • curry leaves a few
  • 1 dry red chilli broken optional

Instructions
 

  • Peel and cook potatoes until tender.
  • Mash them into pieces. Don't mash them to a paste.
  • Add chopped onions, ginger, green chillies and salt to taste.
    Note: Mash ginger into a paste if you don't like to bite on ginger in your salad
  • Add yogurt. I added 1 cup yogurt and thinned it further using water. You can add up to 2 cups of yogurt.

Prepare tempering/tadka/oggarane

  • In a small pan, heat oil.
  • When oil starts glistening, add mustard seeds, cumin seeds, dry red chilli.
  • When mustard seeds splutter, pour the hot oil over the raita and mix.

Notes

If you don't have both mustard seeds and cumin seeds on hand, one of the two can be used.
