Potato raita / Potato salad with yogurt!

Potato raita, aloogadde(batate) mosaru gojju is arguably one of the tastiest sides of all times. I learnt this aloo raita recipe from my mom and I must say it is stellar!

This potato salad makes the perfect side for rice, I even eat it by the spoonful. Comforting salad perfect for the summer! It is simple, needs only a few ingredients and comes together in minutes. So, let’s get started!

Raita is Indian salad with yogurt added.

  • Aloo gadde – means potato, in Kannada language. Kannada is the language spoken by the people of Karnataka, a beautiful state in the south of India.
  • Mosaru – means yogurt in Kannada
  • Gojju – semi solid side dish in Kannada
  • Batate – Potato in Mangaluru Kannada. That’s how diverse India is. Each language has many dialects!

Ingredients for Mom’s potato raita

This recipe needs only a few ingredients. It uses spices only in the tadka, which in my opinion makes it taste so much better!

Potatoes! – You will need potatoes of course 🙂 Cook the potatoes, peel them and roughly mash them. Don’t mash them into a paste, you should still have chunks of potatoes.

Red onions(raw) – You can use other onions like white/yellow but red onion is recommended in this recipe. Shallots and pearl onions will also work well in this recipe as they taste similar to red onions.

Ginger! Ginger is what makes Mom’s potato raita what it is! I have seen that ginger is not commonly added into potato raita but it gives it SO much freshness and flavour! Make sure to properly mash it into a paste, if you don’t like to bite on grated pieces of ginger.

Fresh green chilli – It is an optional ingredient. You can use any variety of fresh green chilli like Thai, Serrano to name a few.

Hot oil – tadka – oggarane

Tadka/oggarane is a technique found across Indian cuisine. It is the process of heating oil and adding spices into it, to make the spices release all their flavours into the oil. This hot oil, along with the spices, is then poured over the dish and it elevates the flavour significantly. Into mom’s potato salad we add mustard seeds, cumin seeds, dry red chilli and curry leaves into the hot oil/oggarane/tadka.

Ingredients
  

  • 500 g uncooked potatoes made 4 cups after cooking
  • ½ cup chopped red onions or shallots,pearl onions
  • 1 tsp crushed ginger/ginger paste
  • 1-2 cups yogurt
  • 1 green chilli any variety optional
  • water as needed

For hot oil tempering/oggarane/tadka

  • 1 tsp oil
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • curry leaves a few
  • 1 dry red chilli broken optional

Instructions
 

  • Peel and cook potatoes until tender.
  • Mash them into pieces. Don't mash them to a paste.
  • Add chopped onions, ginger, green chillies and salt to taste.
    Note: Mash ginger into a paste if you don't like to bite on ginger in your salad
  • Add yogurt. I added 1 cup yogurt and thinned it further using water. You can add up to 2 cups of yogurt.

Prepare tempering/tadka/oggarane

  • In a small pan, heat oil.
  • When oil starts glistening, add mustard seeds, cumin seeds, dry red chilli.
  • When mustard seeds splutter, pour the hot oil over the raita and mix.

If you don’t have both mustard seeds and cumin seeds on hand, one of the two can be used.
